Ingredients
  

  • 2 Pounds Cooked Chicken I used a rotisserie chicken.
  • Cup Taco Seasoning
  • 3 Cups Salsa
  • 4 Cups Shredded Cheddar Cheese; divided
  • 8 Large Flour Tortillas
  • ¼ Cup Water
  • 10 Ounce Can of Enchilada Sauce

Instructions
 

  • Heat oven to 350°
  • Add Cooked Chicken to a skillet heated to medium heat.
  • Add taco seasoning and water to chicken and cook until seasoning is incorporated and the water is cooked out.
  • Transfer mixture to a large mixing bowl. Add salsa and 2 cups of cheese.
  • Stir mixture until well combined.
  • In a 9 X 13 casserole dish add enough enchilada sauce to coat bottom of the dish. Reserve the remainder of the sauce.
  • Add approximately 4 tablespoons of chicken mixture to the center of a flour tortilla.
  • Fold one side of the tortilla over the meat mixture toward the other side. Roll the two end caps of the tortilla closest to the meat mixture in. Continue rolling the tortilla like a burrito to the opposite side.
  • Continue the same steps with each flour tortilla using all the meat mixture.
  • Line the enchiladas in the casserole dish.
  • Top with remaining enchilada sauce and cover with remaining cheese.
  • Bake in oven until cheese is melted and sauce is bubbly.
