A vibrant arrangement of fresh ingredients for Crockpot Cheesy Tortellini, including plump red tomatoes, leafy green spinach, uncooked tortellini on a dark plate garnished with fresh basil, and a small bowl of red pepper flakes, all laid out on a rustic gray surface.

Crockpot Cheesy Tortellini Ingredients:

  • 1 (18 oz) bag of Tortellini: I used 5 cheese, but feel free to use any variety you prefer.
  • 4 cups Chicken Broth: This forms the base of your soup, bringing all the flavors together.
  • 3 Tomatoes, diced: Fresh tomatoes add a juicy, tangy kick to the dish.
  • 2-3 links of Smoked Sausage, sliced: For that smoky, meaty depth.
  • Italian Seasoning, to taste: To bring those classic Italian vibes.
  • Dried Basil, to taste: Adds a sweet, slightly peppery flavor.
  • 1 (8 oz) block of Cream Cheese: For creaminess and a velvety texture.
  • 2 cups Shredded Cheddar Cheese: Because more cheese is always better!
  • Red Pepper Flakes, to taste: For a little spice.
  • 1 (16 oz) bag of Fresh Spinach: Adds color, nutrition, and balances the richness.

Instructions:

  1. Prepare the Crockpot: Start by adding the tortellini, sliced smoked sausage, chicken broth, diced tomatoes, Italian seasoning, dried basil, and red pepper flakes to your Crockpot. Set it on high to let the flavors meld together.
  2. Add Creaminess: Top the ingredients with the block of cream cheese and fresh spinach. Don’t stir yet; let the cream cheese soften and the spinach wilt on top.
  3. Cook: Set your Crockpot on high and cook for 2½ hours. The wait is a small price for the deliciousness ahead!
  4. Mix and Cheese It Up: After the initial cooking time, stir the mixture to blend in the melted cream cheese. Sprinkle the shredded cheddar cheese on top, then cook for an additional 30 minutes on high.
  5. Final Stir: Give everything a good mix to ensure that cheesy goodness is evenly spread.
  6. Serve and Enjoy: Serve this creamy, cheesy, and irresistibly comforting dish hot. It’s perfect on its own or paired with a crisp side salad and crusty bread.

Serving Suggestions:

  • Crusty Bread: Serve with a side of warm, crusty bread or garlic bread to soak up all that cheesy goodness.
  • Fresh Salad: Pair with a simple green salad tossed with a light vinaigrette for a refreshing contrast.
  • Wine Pairing: For the adults, a glass of crisp white wine like Sauvignon Blanc or a light red like Pinot Noir complements the dish beautifully.
  • Make It a Feast: Add a side of roasted vegetables or a platter of antipasto for a complete Italian-inspired meal.

This Crockpot Cheesy Tortellini Delight is more than just a meal; it’s a warm hug in a bowl. Perfect for those days when you need a little extra warmth and comfort. Give it a try and watch it become a new family favorite!

  1. 5 stars
This sounds really good! I would leave the tomatoes out because I can’t eat them because of the acid in them! This will be on our list as will! Thank you!

  2. I put my cream cheese in the crock pot but I can’t get it to melt all the way. So I was going to try using cream cheese spread. Do you think that will work?
But this meal is DELICIOUS!!! MY family loved it. I didn’t think my husband would like it but he even had seconds surprised Me. I also didn’t think the smoked sausage would go with the tortellini boy was I wrong. THIS IS REALLY GREAT!!!!!
