Crockpot Tortellini And Sausage Soup

After eating this soup for the first time, Big Daddy declared it on the menu should we ever decide to open a restaurant. This was very surprising considering, I didn’t expect him to LOVE it. In fact, I expected quite the opposite. I expected him to simply tolerate this dinner and hope I didn’t make it again soon. You can imagine my delight at his declaration. He said that he loved the bits of spinach and the sausage flavor the best. He said he liked the tortellini, but would have preferred a version which included meat. The kids, with the exception of Camille, (since she doesn’t like most food) on the other hand, LOVED everything about this soup. Ethan, who doesn’t like tomatoes, enjoyed the tomatoes in this soup the most. He said they had a sweeter taste to them. Caroline’s favorite was the cheese tortellini. She simply could not get enough of them! Personally, I think every ingredient in this soup mesh well with it’s pot mate. The flavors married perfectly to create this new family favorite.

Crockpot Tortellini and Sausage Soup

Ingredients
  

  • 1 18 oz Bag of Tortellini I used the 5 cheese but you can use any tortellini you like.
  • 4 Cups Chicken Broth
  • 3 Tomatoes, diced
  • 2-3 Links of Smoked Sausage, sliced
  • Italian Seasoning to taste
  • Dried Basil to taste
  • 1 8 oz Block of Cream Cheese
  • 2 Cups Shredded Cheddar Cheese
  • Red Pepper Flakes to taste
  • 1 16 oz Bag of Fresh Spinach

Instructions
 

  • Add tortellini, sausage, broth, tomatoes and seasonings to a crockpot set on high.
  • Top with block of cream cheese and spinach.
  • Cook in Crockpot on High for 2½ hours.
  • After cooking for 2½ hours, stir to mix and add shredded cheese on top.
  • Cook an additional 30 minutes on high
  • Stir to mix then serve.

    This sounds really good! I would leave the tomatoes out because I can’t eat them because of the acid in them! This will be on our list as will! Thank you!

  2. I put my cream cheese in the crock pot but I can’t get it to melt all the way. So I was going to try using cream cheese spread. Do you think that will work?
    But this meal is DELICIOUS!!! MY family loved it. I didn’t think my husband would like it but he even had seconds surprised Me. I also didn’t think the smoked sausage would go with the tortellini boy was I wrong. THIS IS REALLY GREAT!!!!!
