As my mother and father-in-law travel around the United States riding their bikes, they love to here about the local cuisine. On one such trip to Idaho, they heard the tale of Funeral Potatoes. According to Pawpaw, funeral potatoes are a dish that Mormons frequently bring to funerals. Although they searched high and low at various restaurants, Pawpaw was unable to find an establishment which served the famous potatoes. When all else fails, have your daughter-in-law prepare this dish.
Funeral Potatoes
Ingredients
- 4 Tablespoons Butter
- 1 Small Onion, chopped
- 2 Cloves of Garlic, minced
- 1 30 Oz Bag of Frozen, Shredded Hash Browns, slightly thawed
- 1 10.5 Oz Can of Cream of Chicken Soup
- 1 Cup Sour Cream
- 1 Cup Grated Parmesan
- 1½ Teaspoons Salt
- ½ Teaspoon Pepper
- 2 Cups Shredded Sharp Yellow Cheddar
- 1½ Cups Corn Flakes Cereal, lightly crushed
Instructions
- Heat butter over medium heat in a skillet.
- Add onion and cook until soft and translucent.
- Stir in garlic and cook until soft and fragrant.
- In a large mixing bowl, mix cooked onions and garlic, hash browns, soup, sour cream, Parmesan, salt, pepper, and 1½ cups of cheddar.
- Spread mixture in a 9 X 13 greased baking dish.
- Top the casserole with remaining cheese and then the corn flakes.
- Bake in oven at 350° until it bubbles around the sides and the top is slightly browned
