Cajun Pastalaya

Do you need a yummy recipe for a busy night? You can have dinner ready in 30 minutes!! Try this spin on the Cajun classic, Jambalaya! Instead of using rice, as with the typical Jambalaya dish, try using pasta! This dinner is sure to be a crowd pleaser!

Cajun Pastalaya

Ingredients
  

  • 2 Pounds boneless, skinless Chicken I use thigh meat but you can use breast if you prefer.
  • 1 Pound sliced smoked Sausage or Andouille
  • 1 10 oz Can of Rotel
  • 1 enevelope Dry Onion Soup Mix
  • 3 Cups Chopped Onion, celery and bell pepper mix You can get this mix in the freezer section of your supermarket. You can also use less. I find the more you use, the more flavor your dish will have.
  • 2 Tablespoons Kitchen Bouquet
  • 2 Tablespoons Tony Chachere's Cajun Seasoning You can use more or less to your taste. You can also use whichever brand of cajun seasoning your prefer.
  • 1 pound Spaghetti noodles
  • 4 1/2 Cups water

Instructions
 

  • Cut up chicken into bite size pieces and brown with the sausage in a large Dutch oven with a small amount of vegetable oil. Season Meat with the Tony's.
  • Add cut up vegetables and cook until veggies become slightly cooked.
  • Add Rotel, water and Kitchen Bouquet. Bring to a boil.
  • Add Uncooked Spaghetti. Turn heat down to medium and cook until pasta is done and liquid is absorbed.
