Greek Pasta Salad

This salad is so delicious. It is one of my favorites. Unfortunately, the last time I made this salad, I could only get one serving because the kids gobbled it up. This easy meatless dish can be a side dish or the main attraction. Perfect for lunch at home or to bring to work. If you would like to add a meat option, you can add some cut up pepperoni but I do love it meatless.

  1. Kelly, you pretty much have to make your own vanilla sugar. You take your vanilla bean, scrape out your seeds, and you just put the pod into a container of sugar. In a little time, maybe 24 hours, you have vanilla sugar. You can also buy vanilla bean paste and vanilla bean powder
