Ingredients
  

  • 1 lb Cheddar Cheese
  • ½ cup salsa verde
  • 3 large eggs, well beaten
  • jarred jalapeno slices chopped finely (optional) to taste

Instructions
 

  • Spray an 8 X 8 in baking dish with cooking spray.
  • In a mixing bowl, whisk together eggs, salsa and jalapenos. (You can omit peppers if you choose.)
  • Layer bottom of baking dish with ½ of cheese.
  • Pour egg mixture over cheese in baking dish.
  • Top with remaining cheese.
  • Bake at 350° for 30 minutes.
