Ingredients
  

  • 24 oz Frozen Chopped Spinach, thawed and drained
  • 12-16 oz Shrimp You choose the size.
  • 11 oz can of Whole Kernel Corn, drained You can use shoepeg, Mexicorn or sweet. Your choice.
  • 10 oz cherry tomatoes, halved
  • 2-3 links Andouille sausage, sliced You can use regular smoked sausage.
  • 4 tbsp butter
  • 1/2 tsp red pepper flakes
  • 1 c half and half
  • cajun seasoning to taste

Instructions
 

  • Generously season shrimp with Cajun seasoning, cover and refrigerate at least two hours, but I usually do overnight.
  • Sauté sausage in butter, then remove and set aside.
  • Add spinach and cook uncovered for about three minutes.
  • Add corn, tomatoes, red pepper flakes, and 1 cup half and half.
  • When mixture comes to a simmer, fold in shrimp. Cook uncovered on low until shrimp is pink.
  • Add sausage, turn off heat and cover for 15 minutes.
