Ingredients For Spinach and Beef Casserole

  • 2 lbs Ground Beef
  • 24 oz Jar of Ragu
  • 6 oz Tomato Paste
  • 1 Tablespoon Garlic Powder
  • 1 Cup Chopped Onion, Celery, and Bell Pepper Mix
  • 2 (10 oz) Packages of Chopped Frozen Spinach
  • 2 Eggs, Well Beaten
  • ¼ Cup Cooking Oil
  • 1 Cup Grated Sharp Cheese
  • 10 oz Package of Rigatoni
  • 1 Tablespoon Dried Basil
  • 1 Tablespoon Italian Seasoning

Instructions:

  1. Prepare the Beef Mixture:
    • In a large skillet, brown the ground beef along with the chopped onion, celery, and bell pepper mix. Add the garlic powder, dried basil, and Italian seasoning while cooking for an extra layer of flavor.
    • Once the beef is cooked through, drain any excess grease from the skillet.
  2. Incorporate the Sauces:
    • Stir in the jar of Ragu, tomato paste, and the reserved liquid from the spinach (making up one cup total). Mix well, and let the sauce simmer on low heat for 30 minutes to allow the flavors to meld.
  3. Cook the Spinach and Pasta:
    • Cook the frozen spinach according to the package instructions, then drain thoroughly, saving the liquid for the meat sauce.
    • Cook the rigatoni in salted boiling water until al dente, then drain and set aside.
  4. Assemble the Base Layer:
    • In a large mixing bowl, combine the cooked pasta, drained spinach, beaten eggs, cooking oil, and sharp cheese. Stir until well mixed, then spread the mixture evenly into the bottom of a lasagna pan.
  5. Layer the Meat Sauce:
    • Spread the simmered meat mixture evenly over the pasta and spinach layer.
  6. Optional Cheese Topping:
    • Sprinkle additional sharp cheese on top for a golden, cheesy crust.
  7. Bake the Casserole:
    • Preheat your oven to 350°F. Bake the casserole uncovered for 20-30 minutes, or until the top is bubbly and golden brown.
  8. Serve and Enjoy:
    • Remove the casserole from the oven and let it sit for a few minutes before serving. Pair it with a side salad or garlic bread for a complete meal.
