Spinach and Beef Casserole

Equipment

  • Large Skillet For browning the ground beef and cooking the seasoning mix.
  • Large Pot For boiling the rigatoni pasta.
  • Mixing Bowl To combine the pasta, spinach, eggs, oil, and cheese.
  • Lasagna Pan or Casserole Dish For assembling and baking the casserole
  • wooden spoon or spatula To stir the beef mixture and sauces.
  • Strainer/ Colander To drain the pasta and spinach.
  • measuring cups and spoons For precise measurements of ingredients.
  • Oven Preheat to 350℉ for baking the casserole.
  • knife and cutting board For chopping any additional ingredients or garnishes.
  • Aluminum foil To cover the casserole if needed during baking.

Ingredients
  

  • 2 lbs Ground Beef
  • 24 oz Jar of Ragu
  • 6 oz Tomato Paste
  • 1 Tablespoon Garlic Powder
  • 1 Cup Chopped Onion, celery and bell pepper mix
  • 2 10 oz Chopped Frozen Spinach
  • 2 eggs, well beaten
  • ¼ Cup cooking Oil
  • 1 Cup Grated Sharp Cheese
  • 10 oz Package Rigatoni
  • 1 tbsp Dried Basil
  • 1 tbsp Italian Seasoning

Instructions
 

  • Brown beef and cut up seasoning mix, garlic, basil and italian seasoning.
  • Cook spinach. Save liquid.
  • Drain grease from meat mixture.
  • To the meat mixture, add Ragu, tomato paste and liquid from spinach to make one cup. Simmer for 30 minutes.
  • Mix cooked noodles, drained spinach, eggs oil and cheese. Spread in the bottom of a lasagna pan.
  • Spread meat mixture on top of noodle mixture.
  • Top with cheese. (This is optional)
  • Bake uncovered at 350° for 20-30 minutes.
