Tuscan Soup

My friend, Tonya, told me about this recipe years ago. Over the years, I have made it my own. While I was making this soup on a live many of you said it was similar to a soup served at The Olive Garden called Zuppa Toscana. I have never tried The Olive Garden soup but while naming this dish, I decided to name it something similar. This soup is hearty and filling, perfect for a cold night.

Tuscan Soup

Ingredients
  

  • 1 Pound Bacon, cut in bite size pieces
  • 1 Pound Ground Beef
  • 1 Pound Italian Sausage
  • 2 Teaspoons Red Pepper Flakes
  • 1 Cup Heavy Cream
  • 8 Medium Potatoes, peeled and quartered
  • 1 Small Bag Fresh Spinach
  • 1 Small Bag of Fresh Kale This is optional. You can use only spinach, but you could also use just kale.
  • 1 Medium Onion
  • 3 Tablespoons Minced Garlic
  • 1 Quarts Chicken Broth Add water as necessary.

Instructions
 

  • Fry Bacon and Reserve Grease.
  • Cook meats in bacon grease.
  • Add onions and cook until translucent.
  • Add garlic and cook another 3 minutes.
  • Drain grease.
  • Add broth and bring to a boil.
  • Add potatoes and cook until tender.
  • Lower heat. Add spinach, kale, and heavy cream. Cook until greens are tender.

  3. Gonna make this this weekend just have to go get the kale and spinach this evening. I have 8 kids in my home plus my dad and my husband and I so I feed 11 daily will have to triple the recipe lol
