Ingredients
  

  • 2 lbs fresh carrots peeled and trimmed (cut thick ones in half lengthwise)
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp fresh thyme leaves or ½ tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: 1 tbsp butter for extra richness
  • Optional garnish: extra thyme sprigs or a drizzle of honey before serving

Instructions
 

  • Set your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  • Place carrots on the baking sheet in a single layer. Drizzle with olive oil and honey. Sprinkle thyme, salt, and pepper evenly over the top. Toss until everything is well coated.
  • Roast for 25–30 minutes, stirring halfway through, until carrots are tender and slightly caramelized at the edges.
  • For an extra glossy finish, toss the hot carrots with a tablespoon of butter right before serving.
  • Garnish with fresh thyme sprigs and a drizzle of warm honey.
