Ingredients
  

  • 3-4 medium sweet potatoes peeled and diced
  • 4-5 slices thick-cut bacon chopped
  • 1 cup pecan halves or pieces
  • 3 tbsp olive oil
  • 1 tbsp maple syrup optional but delicious
  • 1 tsp smoked paprika
  • ½ tsp cinnamon
  • Salt and black pepper to taste
  • Fresh parsley for garnish optional

Instructions
 

  • Peel and dice the sweet potatoes into evenly sized cubes for even roasting.
  • In a large mixing bowl, toss the sweet potatoes with olive oil, smoked paprika, cinnamon, salt, and pepper.
  • Spread the seasoned potatoes onto a lined baking sheet. Sprinkle the chopped bacon and pecans across the top.
  • Bake at 400°F (204°C) for 25–30 minutes, stirring once halfway through, until the sweet potatoes are caramelized and the bacon is crispy.
  • If using maple syrup, drizzle it over the hot potatoes and gently toss. Garnish with fresh parsley and serve warm.
