Equipment

  • 2-3 qt shallow baking dish
  • sharp knife
  • cutting board
  • small mixing bowl
  • measuring spoons
  • oven mitts
  • Aluminum foil
  • serving spoon

Ingredients

  • 1 small head of cabbage about 2 lbs.
  • 2 1 lb. cans of stewed tomatoes
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • 2 cups toasted bread cubes
  • 1 ½ cups 6 oz. cubed cheddar cheese
  • Butter for greasing the baking dish

Instructions

Prepare the Dish

  • Preheat your oven to 400°F (200°C).
  • Lightly butter a 2-3 quart shallow baking dish to prevent sticking.

Prep the Cabbage

  • Cut a small head of cabbage into 6-8 wedges, about 2 inches thick.
  • Remove the core from each wedge for easier serving.
  • Place the cabbage wedges snugly in the prepared baking dish.

Add the Tomatoes

  • In a small bowl, mix the stewed tomatoes with chili powder and garlic powder.
  • Pour the seasoned tomatoes evenly over the cabbage wedges.

Layer the Bread Crumbs

  • Scatter the toasted bread cubes over the top. They’ll soak up the tomato juices and add a delicious crunch.

Bake

  • Cover the dish tightly with aluminum foil.
  • Bake in the preheated oven for 40-45 minutes, until the cabbage is tender and the flavors meld together.

Finish with Cheese

  • Remove the foil and sprinkle the cubed cheddar cheese over the casserole.
  • Return to the oven, uncovered, for an additional 5 minutes or until the cheese is melted and bubbly.

Serve and Enjoy

  • Let the casserole cool slightly before serving. It pairs beautifully with a fresh green salad or a slice of crusty bread.
