Ingredients
  

  • 1/2 lb. ground pork
  • 1/2 lb. ground beef
  • 1/2 lb. smoke sausage, sliced
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 1 medium green bell pepper, chopped
  • 1 clove garlic, minced
  • 14.5 oz can of diced tomatoes
  • 14.5 oz can of chicken broth
  • 2-3 c chopped cabbage
  • salt and pepper to taste
  • 1 tsp Cajun seasoning
  • 1/2 c rice

Instructions
 

  • In a large pot or Dutch oven, brown the ground pork, ground beef, and smoked sausage over medium heat. Stir occasionally to ensure even cooking.
  • Add the chopped onion, celery, and bell pepper to the pot. Sauté the vegetables with the meats until the sausage is fully cooked and the vegetables are tender.
  • Stir in the minced garlic and cook for an additional two minutes, allowing the flavors to meld.
  • Pour in the diced tomatoes (with their juice) and chicken broth. Add the chopped cabbage, stirring to combine.
  • Season the dish with salt, pepper, and Cajun seasoning. Stir in the rice. Reduce the heat to a simmer and cook uncovered for 35-40 minutes, or until the rice and cabbage are tender.
  • Spoon the jambalaya onto plates and enjoy it hot. For an extra kick, sprinkle a little more Cajun seasoning or hot sauce on top.
