  • 1 lb. deboned Rotisserie Chicken Meat
  • 1 qt Grillo’s Pickle Spears chopped (reserve juice and seasonings)
  • 1/4 purple onion chopped
  • 3 tbsp Fresh Parsley chopped
  • 3 tbsp Fresh Dill chopped (or use dill paste/dried dill)
  • 1/2 cup Cottage Cheese
  • 6 tbsp Dill Pickle Juice
  • Salt and Pepper to taste

Instructions
 

  • Chop the Chicken – First, use a food processor to finely chop the rotisserie chicken, then transfer it to a mixing bowl.
  • Prep the Veggies – Next, chop the pickles and onion, then add them to the chicken.
  • Blend the Dressing – Meanwhile, in a food processor, combine cottage cheese, parsley, and dill.
  • Strain the Pickle Juice – Be sure to reserve the liquid and add the seasonings caught in the strainer to the food processor.
  • Add the Pickle Juice – Then, pour 6 tablespoons of pickle juice into the food processor with the cottage cheese mixture and blend until smooth.
  • Combine & Mix – After that, pour the dressing over the chicken, onions, and pickles. Stir to combine.
  • Serve & Enjoy! – Finally, serve with crackers, in tortilla wraps, or as a sandwich filling.
