Equipment

  • Large Stock Pot or Dutch Oven for cooking the soup and holding all the ingredients.
  • wooden spoon or spatula for stirring and breaking up the ground beef.
  • Chef's Knife for dicing vegetables like onions, celery and bell peppers.
  • cutting board to prep the vegetables.
  • measuring spoons for accurately adding seasonings and spices.
  • Can Opener to open all the canned vegetables and tomatoes.
  • Colander for draining canned vegetables.
  • Ladle for serving the soup.

Ingredients
  

  • 2 lbs. lean ground beef
  • 1 large onion, diced
  • 3 stalks celery, diced
  • 1 large bell pepper, diced
  • 4 cloves garlic, minced
  • 3 tsp salt
  • 3 tsp pepper
  • 48 oz beef broth
  • 28 oz can of crushed tomatoes
  • 28 oz can of whole tomatoes
  • 14.5 oz can of diced tomatoes
  • 1 small head of cabbage, cut into bite sized pieces
  • 14.5 oz can of diced potatoes, drained
  • 14.5 oz can of sliced potatoes, drained
  • 14.5 oz can of carrots, drained
  • 15 oz can of peas, drained
  • 14.5 oz can of corn, drained
  • 14.5 oz can of green beans, drained
  • 16 oz dried elbow macaroni
  • 2 tsp dried basil
  • 2 tsp dried Italian seasoning
  • 2 dried bay leaves
  • Tony Chachere's Creole Seasoning to taste, optional
  • Louisiana Hot Sauce to taste, optional

Instructions
 

  • In a large stock pot or Dutch oven, add onion, celery, bell pepper, garlic, salt, pepper and ground beef. Brown ground meat, drain and return to pot.
  • Add beef broth, crushed tomatoes, whole tomatoes, and stewed tomatoes. Stir to combine.
  • Add noodles, cabbage, seasonings and enough water to cover. Stir to combine.
  • Increase heat and bring to a boil.
  • Reduce heat and add remaining canned vegetables. Again add enough water to cover.
  • Cover and simmer 45 minutes, stirring occasionally to make sure noodles or vegetables do not stick to bottom. Add water when necessary as noodles will absorb lots of liquid.
