Large Stock Pot or Dutch Oven for cooking the soup and holding all the ingredients.

- 2 lbs. lean ground beef
- 1 large onion, diced
- 3 stalks celery, diced
- 1 large bell pepper, diced
- 4 cloves garlic, minced
- 3 tsp salt
- 3 tsp pepper
- 48 oz beef broth
- 28 oz can of crushed tomatoes
- 28 oz can of whole tomatoes
- 14.5 oz can of diced tomatoes
- 1 small head of cabbage, cut into bite sized pieces
- 14.5 oz can of diced potatoes, drained
- 14.5 oz can of sliced potatoes, drained
- 14.5 oz can of carrots, drained
- 15 oz can of peas, drained
- 14.5 oz can of corn, drained
- 14.5 oz can of green beans, drained
- 16 oz dried elbow macaroni
- 2 tsp dried basil
- 2 tsp dried Italian seasoning
- 2 dried bay leaves
- Tony Chachere's Creole Seasoning to taste, optional
- Louisiana Hot Sauce to taste, optional
In a large stock pot or Dutch oven, add onion, celery, bell pepper, garlic, salt, pepper and ground beef. Brown ground meat, drain and return to pot.
Add beef broth, crushed tomatoes, whole tomatoes, and stewed tomatoes. Stir to combine.
Add noodles, cabbage, seasonings and enough water to cover. Stir to combine.
Increase heat and bring to a boil.
Reduce heat and add remaining canned vegetables. Again add enough water to cover.
Cover and simmer 45 minutes, stirring occasionally to make sure noodles or vegetables do not stick to bottom. Add water when necessary as noodles will absorb lots of liquid.
