Ingredients
  

  • 8 oz cream cheese softened
  • 1/4 cup sour cream
  • 1 clove garlic minced
  • 1 tbsp Louisiana hot sauce or your favorite hot sauce
  • 1 tbsp lime juice
  • 1 cup shredded pepper jack cheese divided
  • 15 oz canned corn drained
  • 15 oz canned black beans drained and rinsed
  • 2 oz crumbled feta cheese
  • 1 jalapeño pepper chopped and seeded
  • 2 tbsp chopped red onion
  • 1/2 cup chopped cilantro

Instructions
 

  • Preheat your oven to 350°F (175°C). Lightly spray a small casserole dish with nonstick cooking spray and set aside.
  • In a blender or food processor, combine cream cheese, sour cream, garlic, hot sauce, lime juice, and 1/2 cup of the shredded pepper jack cheese. Blend until fully combined and smooth.
  • Transfer the blended mixture into a mixing bowl. Add the remaining 1/2 cup of pepper jack cheese, corn, black beans, feta cheese, jalapeño, red onion, and cilantro. Stir well to combine.
  • Pour the mixture into the prepared baking dish. Sprinkle with additional cheese on top if desired. Bake for 10-15 minutes, or until the cheese is melted and bubbly.
  • Top with extra cilantro, feta, and a drizzle of hot sauce for added flavor. Serve warm with tortilla chips, crackers, or fresh veggies. Enjoy!
