Ingredients
  

  • 2 lbs russet or Yukon gold potatoes peeled and cut into chunks
  • 4 cloves garlic minced (or roasted for a milder flavor)
  • 4 tbsp unsalted butter
  • Β½ cup grated Parmesan cheese
  • Β½ cup heavy cream
  • ΒΌ cup sour cream optional but recommended
  • Salt and freshly ground black pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Place potatoes in a large pot, cover with cold salted water, and bring to a boil. Cook until fork-tender, about 15–20 minutes.
  • While potatoes cook, melt butter in a small saucepan over medium heat. Add minced garlic and cook 1–2 minutes until fragrant (do not brown).
  • Drain potatoes and return them to the pot. Pour in the garlic butter, heavy cream, and sour cream. Mash until smooth and creamy.
  • Stir in Parmesan cheese and season with salt and pepper to taste. Adjust consistency with a splash of extra cream if needed.
  • Transfer to a serving bowl, sprinkle with extra Parmesan and chopped parsley, and serve warm.
